Welcome to Cooking For The Time Challenged!
My motive for starting this blog is primarily practical: I have reached the stage where it takes too much time to find the recipes that I want to cook.
Perhaps with a blog it could be easier to organize and retrieve them?
I am married and I have 2 children with special needs. One of my daughters, Yaffa, used to be on a feeding tube. My other daughter, Raizel, used to be on a special diet called the Feingold Diet. My husband, Jay, is on the Mediterranean Diet for health reasons. For personal health reasons, I do not eat flour, sugar, wheat, eggs or dairy. So, between all our dietary limitations, I have many culinary challenges.
I work full time by necessity. Food prep, set up and clean up are daily opportunities for organizational growth and development.
I always say, “How we do anything is how we do everything.” The secret to good food starts with the right ingredients and love.
I also believe that our thoughts are very powerful. So, I pray while I cook, and set my intentions on positive and loving thoughts. I am convinced that the food tastes better that way!
When I first started this blog, my husband laughed at the idea of a blog about food. Now, my husband has redeemed himself. He has gained a greater appreciation for the importance of cooking with love and prayer. The power of prayer and positive thinking runs deep!
The goal of this blog is to share my recipes, cooking strategies and sundry thoughts and suggestions on preparing and serving home cooked meals — while juggling work, special needs and special diets within the dietary guidelines of the Jewish faith (Kashrut).
I hope that other people will be able to benefit from my experience of juggling work, home and family responsibilities too.
I try to make food that is fast, easy, and all natural. I call it cooking with maximum taste for minimal time. So, you can see that cooking for the time challenged is me!

Thanks!!! I am glad you liked it! As you, I love simple meals that can be prepared in a short amount of time… most of my pasta’s recipes could be ready in 20 minutes!

With experience I imagine it would be manageable. I have never made pasta from scratch even though the difference in taste cannot be compared.

I am going to enjoy your blogs. Years ago I had a pressure cooker. When it finally gave out I did not replace it. I didn’t see the need. Now I do. Even though retired, it seems that 4:00 in the afternoon comes all too soon and I’m wondering “what’s for dinner.” At 87, I need all the shortcuts I can get, but not at the expense of quality.

Oh gosh, we’re all time challenged, it seems! I loved hearing your story (and my family laughed, too) but I just carry on. I’ve “met” so many nice bloggers on line I feel somewhat validated. The only bad thing about blogging: people always expect you to be an excellent cook, lol!

Thank you! This is a cold one. The hot one with cabbage is coming up before Chanukkah. Strange that you can’t find a “like” – it’s usually right after the recipe, before comments.

I periodically search on reader for a tag kosher, or kosher cooking, and – zilch!

I also wondered if you ever made fermented beets to use as a soup base or for meat? I see it in old cookbooks but I have never heard of anyone making it nowadays.

I know how to do it but we don’t have to do it nowadays because we have kosher sour salt. They had to do it because they didn’t, and lemons were not to be had in a shteitl.

I thought it was because they didn’t have tomatoes and this was to make a soup base. Ok, I definitely like sour salt in my cabbage borscht. I also use lemon juice because the flavor is better.

Tomatoes we had, but only during the summer, just like all the other fruit and veggies, so we would spend the entire summer making preserves (preserves does not necessarily mean jams), and that’s how we had tomatoes all winter. Not fresh, of course, but perfect for cooking.

It is called Russel. I didn’t realize that it was made to replace sour salt or lemon juice. Wow! What a lot of work to get a sour flavor!

Interesting – what is called Russel? I just buy Sour Salt in any kosher grocery. Actually, pickling beats is not a lot of work at all – I pickle practically everything!

The fermented beets. I have never pickled or canned anything. I would like to but my family liked everything fresh. I think that if you know how to pickle and can well, then it probably tastes very good. My mother remembers doing it with her grandmothers. I am from Canada and back then, fresh vegetables were only available during the summer. Otherwise you had a root cellar or canned. Plus she said they had a summer kitchen. Did you?

We had a “dacha” – a summer house with a little garden and a kitchen. It was like, if you want an apple, go up the tree and get it. The canning went on the entire summer. Interesting: I’ve never seen fermented beets called Russel. I don’t usually buy anything pickled because they all use vinegar, and that’s probably what your family doesn’t like. I do pickled beets as part of kimchi, but that’s a whole enterprise, having red cabbage checked for bugs, so I don’t do it that often.

Yup. It is so much easier for me to go to my blog for a recipe then to remember where I put the piece of paper that had the recipe on it!
