CHAYA’S APPLE COBBLER KLP

This is one of my husband’s favorite cakes. The original version used flour and I adapt it for Passover using potato starch. My husband ironically prefers the Kosher for Passover version more. So, now I make the Kosher for Passover version all year ’round.

CHAYA’S APPLE COBBLER 

Ingredients

Peel and dice enough apples to fill a 9X9 or an 8X8 inch square pan.

1 cup flour. For Passover, I use ½ cup potato starch. Matza meal would also work.

½ cup sugar

½ teaspoon baking powder

1 egg

1 teaspoon vanilla

1/3 cup oil

Optional: ½ teaspoon of cinnamon

Instructions:

Peel and remove core of apples. Slice or chop as desired. Place into parchment lined 8X8 or 9X9 pan. My family likes them in circles or semi circles rather than diced.

Mix the ingredients for the dough. Mix by hand or with a hand blender the oil, sugar, vanilla, egg. Sift together the dry ingredients and mix into batter. Spread over apples. Bake at 350*F for 45 minutes or until golden brown.

Optional: I have sometimes sprinkled cinnamon or a bit of lemon juice over the apples before pouring the dough on top.

The recipe above can be easily doubled and baked in a 9X13 pan. I have looked all over for where this recipe came from, and I cannot find the source. If anyone knows, please let me know.

APPLE COBBLER FOR A 9X13 PAN

Ingredients

7 to 8 large (9 cups) tart cooking apples, peeled, cored, sliced 1/4 inch

1/4 cup sugar

1/2 teaspoon ground cinnamon

2 cups all-purpose flour

3/4 cup sugar

2 large eggs

2 teaspoons baking powder

1 teaspoon ground cinnamon

3/4 teaspoon salt

2/3 cup oil

Instructions:

Preheat oven to 350°F. Place sliced apples into ungreased 9X13-inch baking dish. Combine 1/4 cup sugar and 1/2 teaspoon cinnamon in bowl. Sprinkle over apples. Cream oil and sugar together. Add eggs one at a time and vanilla extract. Sift together flour, baking powder, cinnamon and salt and stir into wet ingredients until it forms a dough. Pour over apples. Bake 45-55 minutes or until lightly browned and apples are tender.

This is one of our favorites, all year ’round!
